Event Description:
There is an art behind the whimsical feeling that sparkling wine can give you on a Friday night. The skill of disgorging goes beyond piano room champagne cocktails and fruity flutes on a summer afternoons. Disgorging is the final step in the process before the sparkling can be served chilled with great company. During the disgorging process the yeast is removed from the bottle leaving only the very best contents. The bottle is then carefully topped with a special liquor and re-corked.

The popularity of the traditional hand disgorging practice is declining as technology takes over the skill. However, Sinclair’s Gully still practices the art and teaches their guests the tradition for free. Learn the practice and enjoy the chance to disgorge your own bottle of 93 point sparkling wine, and take it home for $40. You are even welcome to bring a picnic to enjoy under the candlebark gums at twilight as you share your personally perfected sparkling. The natural beauty of Sinclair’s Gully is reason enough to visit the vineyard. The area is home to stunning black cockatoos and displays a multitude of coloured wildflowers in spring. If you decide not to disgorge your own bottle during the lesson you can still try the highly regarded sparkling for $5 a glass, or $20 a bottle. The disgorging sessions are held every weekend at 2pm at the property on Colonial Drive, Norton Summit.
